This Pureed Cauliflower with Garlic, Parmesan, and Goat Cheese is the best recipe I've tried for pureed cauliflower; it's amazing!

I know lots of you are thinking about Carb Conscious Thanksgiving Recipes right now, and if you're avoiding potatoes I'd recommend this lovely Pureed Cauliflower with Garlic, Parmesan, and Goat Cheese, which would taste great with a spoonful of turkey gravy over it. I've tried a lot of variations of mashed cauliflower through the years, and it's the creamy goat cheese that makes this The Best Pureed Cauliflower (in my humble opinion!) and this is the one I make over and over. But I realize that goat cheese is an acquired taste, so if you don't like goat cheese, try it with another type of creamy cheese. 

When I first heard of the South Beach Diet and their now-famous recipe for Cauliflower Mashed Potatoes, the idea of cauliflower masquerading as mashed potatoes struck me as a little strange. I've seen many recipes comparing pureed cauliflower to potatoes, but this pureed cauliflower is perfectly happy about being cauliflower, and thrilled to be flavored with garlic, goat cheese, and Parmesan.  If I was seriously dieting at Thanksgiving time, I'd be happy to have this on my plate next to some Whole Wheat Stuffing or Stuffing Muffins topped with gravy.

Cooking a turkey breast in the slow cooker is a great option if you're making Thanksgiving dinner for just a few people, and I've been cooking turkey this way for years now. I first made turkey breast in the crockpot back in 2008, after Dianne did it Alanna did it, and Stephanie did it. I was impressed with the completely delicious moist and flavorful turkey this method produced, and it gave me a chance to experiment with making lower-carb and gluten-free turkey gravy using arrowroot starch, which was also a winner.

And I think using the slow cooker is such a brilliant idea for Thanksgiving. I've already gushed about how much I love Spicy CrockPot Sweet Potatoes, which is a recipe I've also loved for years. Yesterday we had the first snow of the year at my house, so besides thinking about Carb-Conscious Thanksgiving Recipes, I guess it's also time to think about low-carb comfort food that helps keep you warm. This delicious Low-Carb Slow Cooker Sweet and Sour Pot Roast is a recipe that fits that description for me, and I've made this often since I first posted the recipe back in 2007. And although I really, really, really hate winter weather, I do love cold weather food! 

I'm sure I don't have to tell anyone that sticking to a carb-conscious eating plan is much more challenging during the holidays, and one thing that really helps me is to make recipes that Can Freeze on the weekend, divide the leftovers out into containers with one or two servings, and stash them in my diet friendly freezer so I have plenty of easy low-carb options when I need dinner but don't want to cook. This Low-Carb Slow Cooker Sweet and Sour Pot Roast freezes beautifully, and I've already had the leftovers once for a quick dinner!
